Young, honest and committed chef, who’s path from the Istrian village of Mune to culinary academy was pretty obvious. That’s because Katarina was always surrounded by the community that cared about the food on the table and the soil underneath their feet. She grew up on an organic farm where REAL sustainability was a way of life and not just the trendy topic to talk about. She strongly believes that simple and honest food is the best food. It’s the tradition and table culture for her – cause there’s no gastronomy without culture! 

As a chef of the fun dining restaurant  – @sopalzgb, she aims to create monthly/weekly menus inspired by the availability of fisherman’s catch, or a hunter’s hunt. 

Her thought is, there shouldn’t be glamorizing or romanticizing meat industry so the plates she prepares are full of love and respect toward the animal and also punk toward the fine dining industry. Katarina will always aim to use at least 80% of the whole animal. The same respect she implements in communication and cooperation with the farmers whose work she truly praise. That’s maybe because she’s the one that lived on a farm and grew her vegetables too!

Inspired by the daily hunts, and harvests Katarina creates DYNAMIC menus, always leaving her guests amazed.

Caught up in the wine industry ever since graduated masters of “Viticulture and Winemaking”. Simultaneously, she started taking WSET courses and lastly received WSET L3 diploma. After gaining mostly conventional and book knowledge of the wine world, being kind of sceptic, she continued exploring that world herself, trying to find more to it. Depth, meaning, love, honesty, philosophy.

That’s how she end up exploring biodynamics, spontaneous fermentations and low interventions. Travelled all the way to South Africa to work in biodynamic winery, from where her passion towards the lo-fi wines began. Could’ve done it closer, though. Never have she regret it, though.

Not having any vines back home, or wish to work as an enologist according to different philosophy, she continued working in hospitality, started creating some wine content @vinzual, organizing and managing wine tastings, working in sales and marketing, and finally became a part of the @nesputanavina project.

So, kind of encircled the whole process from the vine to the glass and for her, very importantly, learned how to take pleasure in the art of wine itself. Because WINE is art, an ultimate product of light, air, heat, water, cooperation of microorganisms and human hand, and their mutual sense towards the nature.
